That culinary and geographical leap can largely be credited to Nico de Soto, a globe-trotting bartender and an owner of Mace in New York and Danico in Paris. “I discovered pandan while traveling in Indonesia for two months in 2008,” he said. “They use it a lot to perfume the rice, or in various cakes and candies, the same way we use vanilla, I would say.”
Mr. de Soto started using it for an event in 2010 in London, then on the menu at the Experimental Cocktail Club on the Lower East Side. A pandan cocktail has been on every menu at Danico since it opened last year, and at Mace.
“Some people can’t put out a menu without ginger or mint,” Mr. de Soto said. “I’m the pandan guy.”
Today, you can find pandan cocktails at several Parisian cocktail bars. Before I knew vanilla, I knew pandan. Mind-boggling, I realize, but I was well into my teenage years before I set eyes (and greedy hands) on a plump vanilla bean, whereas my family had a pandan plant growing right at our doorstep. In fact, the corridor we shared with our neighbors was lined with pots of it—Southeast Asian cooks use pandan leaves to scent their dishes so frequently that it would be unthinkable to not have any on hand.
Also called screwpine, pandan (like vanilla) lends itself to both sweet and savory dishes. One of my earliest tasks as mom’s kitchen helper was to run to the door, pluck a handful of pandan leaves, and rinse the dirt off them for her “meez.” Mom would tie the leaves in a big knot and toss them into her pot, use them to line steamer baskets, wrap them around meat for grilling, or pound them with a mortar and pestle to extract their sweet, faintly grassy, emerald green essence. From plain, steamed rice and rich chicken curries to light-as-air chiffon cakes and wobbly jellies, pandan would add an unmistakable, wonderfully fragrant note to the dishes.
Taste being 75 percent smell, I associate the “taste” of vanilla with that of cream and sugar – the ingredients used most frequently to tease out vanilla’s floral-woody scent. Similarly, I tend to associate the “taste” of pandan with that of coconut milk – an ingredient it marries remarkably well with. Once cooked, the hint of grass vanishes, leaving behind a subdued, lightly floral fragrance. Just because it’s light doesn’t mean it lacks punch though. This fragrance is so distinct and carries so pleasingly on the soft, tropical breeze, that local bakeries always have a waffle iron going at their door, churning out stacks of piping hot pandan waffles. (My fondest memories of high school involve heeding its siren call with my friends – following our noses to the bakery during breaks and ordering a waffle apiece. For a dollar, you walk away with a perfectly crisp, buttery specimen, trying not to burn your hands and lips in your eagerness to wolf it down. And for a few cents more, the waffle lady will slather on generous lashings of creamy peanut butter, nutella, or kaya – to push it just that little bit further off the bliss meter).
I like to think of pandan as the everyman’s vanilla. Inexpensive and readily accessible (even if you have black thumbs, they’re usually thrown into your bag gratis by the vegetable seller at the market), pandan is the proletarian worker to vanilla’s bourgeoisie. You may not be in Southeast Asia, California, or Florida (where the plant thrives), but the frozen leaves can usually be found in Asian groceries, and the bottled stuff – pandan paste and pandan essence—work just as well. I wouldn’t rush to replace the fresh leaves in its lightest of preparations—in clear, Cantonese dessert soups or tong sui, for instance – but everything else (rice cooked with coconut milk, gluten-free kuih muih, the green, chewy, squiggles in Indonesian cendol) is fair game. Common names: rampe (Sinhalese), ramba (Tamil), pandan (Spanish, Duch), umbrella tree, screw pine (English), pandan wangi (Malaysia).
(Queensland, Sri Lanka Guardian) Rampe is the only Pandanus species with scented leaves. The sweet smell of freshly harvested leaves is similar to the fragrant of expensive Indian basmati, Thai Jasmine or Japanese kaorimai rice. The origin of Rampe remains a mystery and controversy because there is only one report of a male flowering specimen, none of a female and the species seems not to be known in the wild. Today its distributed in India, Sri Lanka, Malaysia, Indonesia, Thailand, Philippines, Singapore and Western New Guinea.
Rampe is a medicinal and aromatic plant that grows upright with narrow blade leaves and woody aerial roots. The plant has two distinct growth forms. If the plant leave undisturbed, it develops into a small tree with usually unbranched, palm like stem and large leaves (up to 2 m long and 7-9 cm wide). If leaves are continuously harvested, it will instead acquire a low, shrubbier form with smaller leaves (25- 75 cm long and 2-5 cm wide) and without a visible trunk. This small growth form is favoured by ever wet tropical climate, but can slowly revert into the large growth form if left undisturbed. No one has ever captured the evidence of its whole inflorescence (flowers) or fruits. The vegetative reproductive system of Rampe is believed to be a result of long term cultivation. It has not been discovered in the wild and only survives in domesticated conditions.
Rampe is mainly propagated by suckers or by stem cuttings. Suckers removed from leaf axils can be planted straight away or rooted first in a sandy medium. This species is available in some of the tropical plant nurseries in Queensland.
The rampe plant grows very well in tropical Queensland. The plant loves high rainfall, high humidity and year around warm temperatures. Leaves always used fresh (slightly wilted). The leave’s aroma is distinct and hard to describe, somewhat nutty, reminiscent to fresh hay and definitely pleasant. The scent of rampe leaves develops only on wilting. The fresh, intact plants hardly have any odour. On the other hand, dried rampe leaves lose their fragrance quite quickly. The flavour component of rampe leaves is not well investigated. It is speculated that the flavour is due to a volatile product of oxidative degradation of a yellow carotenoid pigment that forms only when the leaves withers.

We have many kinds of big Pandanus trees in the Pacific Islands, so when I say I am using a Pandanus leaf as a herb or spice people immediately think of the 4 ft long leaves of the trees that are used to weave mats and baskets.......and they look at me funny.  I have to explain that Pandan is a mini sized Pandanus that would fit into their herb garden just fine.  A student from Malaysia introduced this plant to me and I have been growing it and using it for over ten years now.  It makes my common, California grown, rice give off  the lovely Jasmine rice smell when cooking and adds a nice subtle flavor to the rice as well.  Here in Hawaii, gourmet rices are becoming big time, with the rice shelves at the supermarket expanding greatly with all the fancy international choices.  Pandan makes my cheap rice taste like a gourmet rice.  It may be my imagination, but I think that the cooked rice does not go off so quick either if it has been cooked with Pandan.
The Pandan is a stalk like plant with long slender leaves of about 1- 1 1/2 ft. long.  After a while, the mature plant gives off little offshoots so that it becomes more of clump.  Mine has not grown higher than 3 ft.  As it matures, the plant bends down with the weight and sends out aerial roots to support it.  If you do not keep an eye on it, it could go expanding out in your garden so you do need to expect it to spread out somewhat.  However, if the clump is just taking up too much room, just break off some of the off shoots to give away as gifts or to root and pot up.  After about five years, I pulled up most of my Pandan and started again with  new rooted tops as the old clump was starting to look too messy and tangled.  I do love the fragrance of the Pandan in the garden on a humid or rainy day.
The Pandan does not flower......an indication that this plant has relied on man to reproduce it for thousands of  years.  Pandan will grow in sun or semi-shade.  It does like moist soil.  I have seen it grown in swampy areas in SE Asia, but is grows in my sandy soil OK although I do water it every few days.  I notice my plants leaf tips get burnt when the salt wind gets going but otherwise it does fine.  It has no disease problems except that I notice that slugs will eat the tender leaves of the baby off shoots when I pot them up if I leave the pots sitting on the ground.
To propagate new Pandan plants I pull off an off shoot/sucker from the mother plant and leave it standing in water for a few weeks until it starts rooting before I pot it up.  I change the water daily to keep it fresh and oxygenated.  I found this worked better than just potting up the off shoot straight away where it tended to rot and die.
Pandan is commonly grown throughout SE Asia as a herb/spice.  As I said, I add my Pandan leaves to ordinary rice to give it a subtle Jasmine rice flavor.  I suspect I may be getting added benefits of some plant goodness into my rice as well.  Some in SE Asia consider the plant to have medicinal qualities.
If you are familiar with Nasi Lemak from Malaysia, this is just rice cooked with coconut milk and a few leaves of Pandan.  The usual method is just to cut three leaves of Pandan, tie them together into a knot and throw them in the pot with the rice.  This makes for easy removal at the end of cooking.  Do not use the white part of the leaf at the base.  Leaves do keep quite well in the refrigerator.  Wrap them up in a damp cloth or paper towel and store them in a plastic bag.
You can buy bottles of Pandan essence in Asian stores.  They are usually bright green in color so I eye them suspiciously.  I think green food color has been added.  I ate Pandan bread  and Pandan mochi in Malaysia that was green in color.  To tell the truth, there was more green food coloring there too than any Pandan taste that I could detect.  In Thailand I bought small pieces of chicken wrapped in Pandan leaves and fried.  It was nice chicken but I could not taste any Pandan flavor.  More a unique way of presenting food.
On looking around the Internet I find recipes for making your own Pandan juice.  Just blend 6-8 leaves with 2/3 cup of water in a food processor and discard the solids to keep the liquid for cooking.  Or you can make a Pandan paste.  Boil 1" pieces of leaves in 1/2 a cup of water and then throw it all into a food processor and use the resulting paste to add to your cakes and desserts. This sounds better than buying those bright green bottles of Pandan essence at the store.  I think I will just be sticking to throwing a few leaves into my rice pot which has become a long time habit now.  Some Nasi Lemak goes over well too....

Gout occurs when the excess uric acid accumulates in the joints and other tissues as crystals. Excess uric acid is caused by either the inability of the kidneys to flush it out and/or the body produces too much uric acid.
Over the years, the uric acid crystals will build up in the joints and the surrounding tissues forming large deposits called tophi which look like lumps under the skin especially near severely affected joints, fingers and toes. The most obvious symptoms are inflammation in the joints, and severe pain, especially in the evening. The other symptoms are loss of appetite, lack of sleep, presence of kidney stones, and even possible kidney failure.
Gout usually occurs in males over 40 years, and females following menopause. The pain usually comes in a sudden and may last for several days.

:Outdoor Planting
Garden sites that receive full, all-day sun to partial afternoon shade make the best planting spots for pandans. Moist soil that retains moisture without becoming soggy results in the healthiest growth, although a pandan can tolerate some drought stress once it's established. Sites require minimal preparation before planting. Break up the soil to the depth of the root ball in an area twice as wide as the root. Plant the pandan at the same depth it was growing at in its nursery container. Two women scientists from the Philippines have received awards from international science research communities for their novel research work giving prominence to endemic plants.
In a recent press briefing, Maribel G. Nonato and Rizalina L. De Leon were presented by the Philippine Association for the Advancement of Science and Technology (PhilAAST), headed by current Department of Science and Technology (DOST) secretary Fortunato T. de la Peña, as recipients of this year’s Gregorio Y. Zara Awards for Basic and Applied Research.
PhilAAST aims to promote more science and technology developments in the country through scientific and technological research that contribute to the knowledge stock and national development.
Dr. Nonato was conferred the Gregorio Y. Zara Award for Basic Research for her pioneering works on the Phytochemistry and biological activities of Philippine genus Pandanus (Family Pandanaceae) or better known as pandan plants.
Dr. De Leon was given the Gregorio Y. Zara Award for Applied Research for her bioethanol production using local varieties of fungi as alternative sources of ethanol additives replacing food-based crops such as corn.
Dr. Nonato, who is currently the Vice-Rector for Research and Innovation at the University of Santo Tomas, has spent years in doing groundbreaking research on pandan.
Prior to her research, there was little known information about pandan. Locally, 20 out of the 450 species of this monocot plant grow abundantly in the country. Ordinarily, pandan leaves are used by locals in preparing sweet delicacies and beverages due to its sweet aromatic scent.

But a turn of events almost stalled her research as Dr. Stone’s untimely demise and limited resources slowed down what could have been a smooth start. However, Dr. Nonato was unhindered by her predicaments and continued her work.
Her research led to the discovery of new secondary metabolites with new biological activities, which is the basis for its medicinal attributes. With her breakthrough discovery, our neighboring countries such as Malaysia, Indonesia and Thailand undertook similar research on their respective Pandanus species.
Moreover, biological studies on pandan have found it as potential source of anti-microbials, anti-viral, diuretics, anti-tuberculars, antioxidants, and anti-inflammatory agents.
Consequently, Dr. Nonato’s research on the new alkaloids earned her the 2006 National Research Council of the Philippines Achievement Award in Chemical Sciences. And for her students, her various works on pandan has earned her the monicker “Pandan Queen” as most research literature is attributed to Dr. Nonato’s works.
“You just have to work diligently and be the expert in that field,” Dr. Nonato closes.

Deviating from the usual bioethanol feedstock using corn and other similar food-base materials, Dr. De Leon focused on local fungal species that can degrade complex polymers called lignin to produce ethanol as fuel additives.
According to her, corn and other food-base raw materials should not be used in the production of alternative fuel as this threatens food security in the country.
Her team identified Fusarium moniliforme, one of the most prevalent fungi, as a promising source of ethanol through a consolidated bioprocessing approach that extracts the ethanol from its solid form.
The bioprocess provides the fermentation resulting in the production of a substance with higher ethanol concentration at a shorter processing time.
Other notable scientists conferred were Dr. Enrico C. Paringit, recipient of the David M. Consunji Award for Engineering; Dr. Antonio Dans, for Dr. Paulo C. Campos Award for Health Research; and Dr. Antonio Laureana as this year’s Leads Agri awardee.
In his closing remarks, Secretary Fortunato T. de la Peña encouraged DOST to give more recognition to local scientists and researchers as this provides a channel for local talents to be recognized.
“I hope we could give more awards to our local scientists to inspire them and give credit and prominence to their works and contributions to science and the society.”
